When unventting an attic, you can only get so close to a flue with spray foam beacause of the heat (depending on class of flue). What are some suggestions to fill in this "space" between the spray foam and the flue (usually about 2-3" per side of the flue)?

You should use an insulation that can take the higher temperature of the flue pipe. Rockwool is a common choice.
