Gas furnace in attic
I will have a gas furnace in attic on a new construction home.

How is the correct way to get combustions air to the burner and how do you insulate around or close to the vent to minimize heat transfer?

Your HVAC contractor should be able to perform the calculations for the adequate air distribution system. When using SPF however, he should use 0.35 ach or less when performing his calculations or they will over engineer the system. As for how to insulate the hot surfaces, sprayfoam will discolor and char between 225 to 275 degrees F. So to be safe, use a more heat resistant insulation in contact with surfaces with temperatures greater than 200 degrees F. Check with your supplier for their specific temperature limiations.
