Mason,
I need to spray against drywall. Do you have any knowledge of foam/heat bowing the drywall. If so how do I alleviate this problem as in my application I must spray against the drywall.

You should not have a problem with spraying on drywall assuming that you spray in lifts less than 2 inches. However, if you were doing a closed cavity fill, the pressure of the rising foam would bow the drywall and possible pop it off the studs.

What temperature do I need to allow the 2 inch lift to cool to when spraying subsequent lifts?

It only takes a couple of minutes to dissipate the heat before going over it again. I like to spray 4-5 stud cavities before coming back to the first one. That should plenty of time for the foam to cool sufficiently for another pass.
